Limarí Valley, Chile
ABV: 12% An exceptional partnership between Viña Tabalí and the prestigious Champagne house Thiénot of Reims, France. TATIÉ combines Chilean terroir with French expertise in traditional method sparkling wine production. Winemaker Felipe Müller (five-time Chilean Winemaker of the Year) collaborated with Thiénot's winemaking team to create this world-class sparkling wine.
The Blend:
60% Pinot Noir and 40% Chardonnay, sourced exclusively from the renowned Talinay vineyard, where unique calcareous limestone soils meet the cold coastal climate of Limarí. Aged 30 months on lees using the méthode traditionnelle, with a dosage of only 5 grams per liter, making this an extra brut style.
Tasting Notes:
An elegant sparkling wine with a pale, delicate bronze-pink hue and fine, persistent bubbles. The nose opens with bright notes of sour cherry and strawberry, followed by hints of green apple, yeast, and delicious pastry notes. On the palate, this wine reveals exceptional harmony—lush yet precise, with flavors of redcurrant, malt, and strawberry yogurt. The mouthfeel is slightly saline with a pleasantly dry effect, showing the influence of the limestone-rich terroir. Well-handled dosage and racy acidity create a fresh, layered, tapering finish that is both refined and memorable.
Food Pairings:
Perfect as an aperitif or for celebrations. Pairs beautifully with shellfish (especially oysters), appetizers and snacks, smoked salmon, ceviche, sushi, fresh goat cheese, or delicate canapés. Its minerality and bright acidity make it an ideal companion to raw bar selections and light seafood dishes.
The Terroir:
The Talinay vineyard sits just 12 kilometers from the Pacific Ocean in a small hidden valley, where constant cold coastal breezes create the coldest planted zone in the entire Limarí Valley. The calcareous limestone soils—a unique geological phenomenon in Chile—provide exceptional minerality and structure, allowing TATIÉ to rival traditional Champagne in quality and character.
