This innovative sparkling rosé demonstrates the versatility of the Baga grape—traditionally known for producing powerful red wines—transformed here into an elegant, refined sparkling expression. The Atlantic influence of this coastal region imparts distinctive freshness and minerality to the wines, while the terroir's unique characteristics provide the perfect foundation for traditional method sparkling wine production.

Winemaking

This exceptional sparkling wine begins with meticulous vineyard selection, where only the finest Baga grapes are hand-harvested at optimal ripeness to preserve their delicate aromatics and natural acidity. The winemaking process reflects a commitment to quality and tradition: the grapes undergo gentle crushing followed by cold decanting to ensure clarity and purity of fruit expression.

The first alcoholic fermentation takes place in temperature-controlled stainless-steel vats, preserving the bright fruit character and freshness essential to fine sparkling wine. The second fermentation—where the wine develops its signature bubbles—occurs using the traditional method in stainless-steel vats. The wine then ages on fine lees for six months with periodic bâtonnage (stirring of the lees), a technique that adds complexity, creaminess, and depth to the final wine while maintaining its vibrant character.
