Paysan Chardonnay is a white wine from Monterey, California.  Bright, with orchard fruit giving way to an intense minerality. The wine is produced predominantly from a few vineyards at the base of Jack’s Hill, planted on the distinct iron oxide granite that dominates the east side of the Salinas Valley, directly east of Sleepy Hollow North.

It opens with aromas of green apple, lemon zest, and white flowers, leading into a palate that’s crisp and clean, showcasing orchard fruit, citrus, and a pronounced saline minerality. It pairs beautifully with seafood such as oysters, grilled halibut, or shrimp scampi, as well as lighter fare like goat cheese salads, roast chicken with lemon and herbs, or vegetable risotto.
