Domaine Olivier Guyot's Morey-Saint-Denis Premier Cru Les Sorbets is made from 100% Pinot Noir grown on limestone and clay soils. The estate practices sustainable farming with no herbicides used since 2000, employing hilling and plowing instead. Grapes are hand-picked, traditionally fermented in tank for 3-4 weeks, then aged 14-18 months in French oak barrels from Forêt de Troncet, with 30% new oak and 70% single-wine barrels.
The wine displays sour cherry aromas with notes of leather and wood, gaining complexity and spicier nuances as it ages. Well-balanced on the palate with dashing structure, showing notes of red fruit and licorice. Pinot Noir from Morey-Saint-Denis Premier Cru tends to be more masculine than Chambolle-Musigny but softer than Gevrey-Chambertin. The 2019 vintage has a drinking window of 2024-2031.
